Fritos Corn Salad

I make this fritos corn salad whenever I need a no-fuss side that still feels festive. It’s one of those dishes I’ve brought to more potlucks than I can count because it travels well, looks bright on a buffet, and gives everyone that satisfying crunch they didn’t know they were missing.

What I love most about this salad is how the textures play off each other: creamy mayo-coated kernels and melty cheese contrasted with the spicy crunch of Chili Cheese Fritos. The colors—gold corn, ruby red bell pepper, and emerald cilantro—make it feel like summer on a plate, and the scent of fresh pepper and cilantro comes through even before you take a bite. I usually prepare the bulk of it in advance and add the Fritos right before guests arrive so every bite stays crisp. Finally, it’s ridiculously flexible. Serve it alongside smoky grilled meats, tuck it into tacos for a fun textural boost, or set it out as a bowl on a casual buffet. The formula is forgiving, so you can tweak the dressing or swap ingredients depending on what you have in the fridge without losing the essence of what makes this fritos corn salad so addictive.
