A pancake is a flat cake, often thin and round, prepared from a starch-based batter that may contain eggs, milk and butter and cooked on a hot surface such as a griddle or frying pan, often frying with oil or butter.
Ingredients
1 1/2 cups all-purpose flour
2 tablespoons sugar
2 teaspoons baking powder
1/4 teaspoon salt
1 cup milk
4 tablespoons unsalted butter melted
1 teaspoon vanilla extract
2 large whole eggs
1 egg yolk
Instructions
Preheat a nonstick pan over medium low heat.
In a large mixing bowl, combine the dry ingredients and whisk together.
In another mixing bowl, combine the wet ingredients and whisk them.
Pour the wet mix into the dry mix and whisk until combined.
Scoop up 1/2 cup of pancake batter and pour it in the center of the pan. Cook until there are many bubbles on the surface and the edges become firm.
Flip the pancake and cook for another 30 seconds, then remove to a plate and serve warm.
