Sapin sapin is a Filipino rice cake made from glutinous rice and coconut milk. This rice cake is composed of layers each with a different color and flavor. One layer is colored yellow and has the flavor of ripe jackfruit; the another layer is white and has the flavor of young coconut or just plain coconut milk; the third layer is violet in color and has the flavor of purple yam or ube.
Ingredients:
1 1/2 cups glutinous rice flour
1/2 cup rice flour
1 teaspoon vanilla extract
1 cup white sugar
1 cup cooked and mashed ube
4 cups coconut cream
1 can condensed milk
1/2 cup coconut latik – for topping (recipe for latik click here ⇒biko with Latik)
food flavoring/coloring;
violet food coloring or ube extract
yellow food coloring , 1/2 cup langka strips or langka extract
Procedure:
Blend all ingredients except mashed ube, jackfruit and food colorings.
Divide into three parts:
First part – add ube and purple food coloring mix well
Second part – add yellow coloring, langka strips or langka extract. Mix well.
Third part – just plain white.
Grease a round baking pan and line with greased banana leaves, then, pour in purple mixture. Steam for 30 minutes or more, until firm then add the second part and steam until firm… then lastly add the white mixture and continue steaming until firm. Top with coconut latik and serve.
