Ginataang Langka (Green Jackfruit Curry) with Chicken or Dried Anchovies (Dilis)

Cut-the-core-out-of-the-jackfruit

 

Ingredients:

500 grams fresh or frozen or in can unripe jackfruit, chopped

150 grams breast chicken, strips (optional)

150 grams of fresh shrimps (optional)

150 grams of dried anchovies (optional)

4 cups coconut milk

1 can banana blossom (puso ng saging) (optional)

3 pcs. green chilli or 1 medium size capsicum, chopped (optional)

1 medium onion, sliced

5 cloves minced garlic

2 tablespoon fish sauce

1 teaspoon sugar1 teaspoon freshly cracked peppercorn

3 stalks of green spring onion

4 tablespoons cooking oil

1 medium size ginger, sliced into strips

 

Instructions:
Heat the cooking oil in a pan. Sauté the onion, ginger and garlic then add the chicken, shrimps and anchovies. Cook until medium brown. Pour the coconut milk into the pan and let it boil. Cover and simmer for 10 minutes. Add more coconut milk or water if needed. Add the chilli, and fish sauce. Stir then add the banana blossom and jackfruit and cook for another 20 minutes or until tender, add the spring onion.

Serve with steaming hot rice and enjoy!
