Japchae Korean Noodle Dish Recipe

Japchae is a simple Korean noodle dish jampacked with a rainbow of vegetables and accented with a hit of flank steak.

The Korean culture is quite unique in its approach to food. Food seems to permeate every aspect of life.

Korean cuisine is largely based on rice, vegetables, and meats. Traditional Korean meals are noted for the number of side dishes (반찬; banchan) that accompany steam-cooked short-grain rice. Kimchi is almost always served at every meal.

The basic seasonings-red pepper, green onion, soy sauce, bean paste, garlic, ginger, sesame, mustard, vinegar, wine have been combined in various ways to enhance Korean foods. Korean food has the various side dish. Favorite side dishes are bean paste soup, broiled beef, fish, cabbage “kimchi”, and steamed vegetables.

A wide variety of fermented offerings make Korean food stand out from the cuisines of its geographical neighbours.

6 ounces beef steak, cut into thin strips
4 minced garlic cloves, divided
6 teaspoons sugar, divided
1 teaspoons ground black pepper, divided
5 tablespoons soy sauce, divided
4 teaspoon sesame oil
1 onion, sliced thinly
2 medium carrots, julienned
4 fresh shiitake mushrooms, cut into thin strips
1 medium red bell pepper, cut into thin strips
3 large handfuls baby spinach
4 scallions, cut into 3-inch sections and thinly sliced
10 ounces Korean glass noodles
2 tablespoons vegetable oil
1 tablespoon toasted sesame seeds
1/4 teaspoon salt
1 teaspoon chilli oil (add more if you want it spicier)


Mix the beef together with the garlic, 1 teaspoon sugar, 1/2 teaspoon ground black pepper, 1 tablespoon soy sauce, and 2 teaspoons of sesame oil.

Prepare the vegetables, and set aside.

Cook the noodles for 7 minutes in a large pot of boiling water. Strain and cut with scissors so that they’re a little shorter. Add 1 teaspoon sesame oil, 1 tablespoon soy sauce, and 2 teaspoons sugar to the noodles. Mix thoroughly.

Heat up a skillet over medium high heat. Stir-fry the onion, mushroom and carrot with 1 tablespoons of vegetable oil until tender, but still a little crunchy. Transfer to a large mixing bowl.

Turn up your heat to high, and add the beef to the pan. Stir-fry for a couple minutes until the beef is no longer pink.

Transfer the noodles and the beef to the mixing bowl with the sesame seeds.
Add 3 teaspoons sugar, ½ teaspoon ground black pepper, 2 1/2 tablespoons soy sauce,1 teaspoon chilli oil (add more if you want it spicier) and 1 teaspoons of sesame oil to the mixing bowl full of ingredients.

Mix to combine all the ingredients and serve.
